This is a basic pesto. Which you can experiment with. You can easily try different herbs and nuts as variations. It goes great with pasta, but can also be enjoyed with toast, scrambled eggs and everything else.

Add the nuts, lemon juice, garlic and salt and pepper and pulse until well chopped in the food processor

Add the basil and pulse until combined

Add the olive oil, and pulse until combined.

Add the parmesan cheese and pulse to combine

- Add more Olive Oil for a smoother texture. - I personally love to have this with shiitake mushrooms in a penne pasta. Simply sautée the mushrooms first to release their flavour, add one cup of the pesto. Let it simmer. Wait for oil to start separating and add your el dente pasta. Splash in some of the reserved pasta water for a nice and moist pasta. - Add grilled chicken breast strips for added protein. It goes well well.
